I don’t know a southern cook anywhere who doesn’t include spaghetti and tacos in their repertoire. I love good country southern food but I am glad we have learned that there is a bigger world out there to draw inspiration from. I don’t know what it does exactly but it’s a good trick to have in your culinary arsenal. If you fry a couple of pieces of bacon and render the fat to make a broth for the peas, they are better.Īnother trick I learned from my family was to put in a pinch of sugar along with the salt in the pot. An old lady I was not particularly fond of taught me a valuable trick in cooking peas and beans. Some people just throw in the bacon and boil it with the peas. We don’t use much bacon in the peas anyway. I am so glad that bacon has come back into fashion and we are no longer so afraid of death by cholesterol. I mentioned the smoky bacon as a seasoning for the peas. When I asked her why she said my aunt as a little girl disliked okra, so she would season the peas with it then remove it. When It was done, she would take the okra out and serve it on a separate plate, not mixing it into the peas. Would I cook the okra with the peas? I remember my grandmother would wait until the peas were almost done, then lay the okra on top to steam. The next question is would I add in smoky bacon to season it? I would just slice them raw alongside the cornbread. I would probably not cook the tomatoes unless there were so many I could afford to make a tomato pie. I would try to find dishes that could be served with cornbread on the side. Right now, it’s summer in the deep south, so I would have to fix foods that featured garden produce like peas, tomatoes, corn and okra. If I had been on that show, I would have known what I would make. They were tasked with preparing foods with ingredients local to their area and dishes that were important to their ethnic backgrounds and families. The contestants were of varied ethnic backgrounds. They had cooks from every part of the US. Most of us are not only eating good food but learning to fix it. Maybe this is why there are so many cooking shows and channels on television. We can enjoy this creative endeavor at any time. We don’t have to go anywhere to enjoy it. All the basic materials are available in supermarkets or the local grocery store.”Ĭooking is something we can do at home. She said “Cooking is an art that has a great advantage over some of the fine arts we admire, for its basic tools are available to most of us. When I picked it up yesterday I was immediately struck anew by her words in the introduction. I found this cookbook as a former library discard. Of course, I have collected as many of her books as I can find on used book sites because they have been out of print for years. It’s the kind of book that you can pick up, read a chapter and sigh with wellbeing. The essays are usually divided into seasons and months. She writes about country life and food is an integral part of that life. I discovered her through a friend in the 1970s. I picked up one in my collection yesterday by one of my favorite writers, Gladys Taber. I love to cook, I love to eat and I love to talk about food. Today we are going to talk about one of my favorite topics – food. I love to use blanco tequila for margaritas, but you could also use reposado. Tequila (I highly recommend looking for a tequila that is 100% blue agave! Pure agave tequila has no carbs, is super low in sugar, and actually has some health benefits.Ingredients for this Skinny Margarita Recipe: This is definitely a matter of preference, so use your favorite! Tequila blanco is clear, and reposado is briefly aged in barrels to give it a touch of vanilla-ish flavor and color. I personally like using either tequila blanco, but you can totally use reposado tequila if you prefer. This skinny margarita recipe consists of only fresh lime juice, fresh orange juice (rather than orange liqueur that has a ton of sugar and calories), light agave nectar, and tequila blanco. What makes a margarita a “skinny” margarita? Simply put, it doesn’t have all the sugar and crap that comes in pre-made mixes. We’ve also made blueberry cilantro margaritas, grilled pineapple margaritas, and skinny blackberry margaritas! What is a Skinny Margarita? Luckily, developing this recipe totally got us through our summers in North Carolina, and now I get to share this super easy recipe with you! Southwest Boulevard is lined with incredible Mexican restaurants that won’t steer you wrong, to start! But seriously shoot me an email if you ever plan to visit KC and want a solid list of where to drink margaritas. (Note: we have since moved home and are *blessed* yet again with an abundance of insanely delicious margaritas in KC. I created this recipe when Mark and I lived in a small town in North Carolina, and struggled to find super delicious margaritas like we were used to back in Kansas City. But this skinny margarita recipe is full of fresh citrus juice, light agave nectar, and (of course) tequila! I’ve never been a fan of the pre-made mixes that most restaurants offer they’re so sweet, sticky, and unsatisfying. Making a skinny margarita at home is incredibly quick, simple, and rewarding. Made these? Let us know how it went in the comments below. The Best Homemade Skinny Margarita Recipe. To get it onto your glasses, rub the rims with a wedge of lime, then dip the rim in the salt and rotate it all the way around. Try infusing yours with a little lime or citrus zest for extra color too. Speaking of garnish-no matter what flavors you go with, we think a salt rim is a must. Don’t forget to use extra fruit or veggies for garnish too. Just because they’re “skinny” doesn’t mean you can’t have some fun with it! Try simply blending them up with some ice for a frozen libation, or experiment with sliced jalapeño, cucumber, basil, blood orange, pomegranate… the sky’s the limit. Once you’ve got the basics down, you can feel free to change things up. This means not only are these “skinny margs” lower in calories, they’ve also got slightly less alcohol (meaning you can enjoy more of them □). Because orange liqueurs like Cointreau or triple sec are traditionally used to add sweetness and a little extra citrus flavor to a margarita, we’re going with orange juice (fresh is best) and agave instead. Margaritas are pretty slimmed down (or “skinny”) already, ingredients-wise, so all we’re doing here is removing some of the refined sugar and replacing it with more natural ingredients. This recipe takes that concept one step further, turning the tequila classic into something easy to drink and enjoy all year long. Do you remember the first time you ever had a homemade margarita (or maybe even a top-shelf Cadillac margarita)? We do-it was tart, refreshing, and, most notably, miles away from those sugar-laden cocktails made from store-bought mixes (you know, the ones that cause horrible hangovers?).
